I started with a simple egg drop soup, broth (of your choice, I used chicken broth) and eggs. I mixed about 5 eggs together into a bowl and then slowly poured the egg mixture into the simmering broth while slowly stirring. I then added extra ingredients to my taste – ginger, cilantro, halved grape tomatoes, sliced mushrooms and a squeeze of fresh lime juice. I let everything simmer together for 15/20 minutes. Voila! I don’t make soup often, but I may be reconsidering that after this culinary adventure!
On a side note, do you watch Master Chef? I’ve been obsessed with this show and it has made me start pushing myself to try new things. I feel like I often make similar foods because I’m comfortable with the same ingredients. I want to become a better chef and that means getting outside of my comfort zone. I’m considering getting a cooking magazine subscription to help inspire me. Does anyone have a good suggestion of one?
